Penne with Tuna and Tomatoes

4 servings (can be halved for 2):

½ lb. mini penne (I used whole wheat reg.? penne)

1 lb. cherry tomatoes

2 cloves garlic, peeled

½ cup basil leaves

1 Tbsp. mint leaves

2 Tbsp. olive oil

2  6-oz. cans chunk tuna, drained and flaked

Salt and pepper to taste

Shredded basil and halved tomatoes for topping (optional)

Cook pasta according to package directions. Meanwhile, puree all the ingredients except the tuna in a blender (for half recipe, I could use mini-processor). Drain the pasta, return it to the pot, and stir in the tuna and sauce. Season with salt and pepper. Top with basil and tomatoes. (We served with ½ oz. grated Parmesan cheese per serviing.)
