DUTCH-STYLE OVEN BAKED PANCAKES(Serves 1, can be multiplied, but each needs own pan)

1/2 c. flour
1/2 c. milk
2 eggs, well beaten
2 to 4 tbsp. butter

Preheat oven to 425 degrees. Mix ingredients lightly. Melt butter in pan (I use cast iron skillet or similar). (Can also add fruit, cooked bacon, etc., at this point) Pour in batter. Bake 15 to 20 minutes. Remove and sprinkle with lemon juice and sugar.
