CEREAL CHEESE SQUARES

I was going through my old, non-digital recipe box and discovered a yellowing-card with the following recipe. I don't think I'd ever made it. It was intriguing so I whomped up a couple batches, and it's really good, like bite-size cheese straws..

48 bites

Combine all ingredients in a bowl and mix thoroughly (hands work best for this). Turn out on lightly floured board and pat or roll into rectangle about 6 by 8 inches and 3/8 inches thick. Using a ruler (optional, but helps), cut with knife into 1-inch squares.

Remove each square carefully and place 2 inches apart on lightly greased (I used spray) backing sheet. Bake in moderate oven (350 degrees F) for 15 minutes or so until lightly browned.  Cool  trays on rack.

(NOTE: in the second batch, I had a bit of extra cheese, which caused these to spread out rather than be little squares. Still delicious, but more fragile.)
